These Asian-inspired dishes were created by Rob Conneloey of The Curious Kumquat in Silver City, New Mexico as part of the March 2011 Deep Plate Exercise, where East meets the Old West.

 

food plating inspirationHis first dish of four wing salt bush-brined shrimp includes napolitos, daikon, and an elm bark panko crush.

His second dish includes Korean braised short ribs, avocodo, and a salsa of sesame oil, sweet juniper, hackberry, and rehydrated cholla fruit.

Both ere plated on the Inspiration collection from Tafelstern.
