His "Mpumalanga Morning" dish was originally published in the October 2009 Deep Plate exercise. It contains Naartjie citrus curd, guava mascarpone with subtropical fruit, Macedonia (consisting of papaya, pineapple, and cape gooseberry), garnished with granadilla pulp and spring flowers.
