This beautiful sea bass plating is from Matthew Tillman, chef at the Myers Park Country Club in Charlotte, North Carolina.

It was created for the February 2011 Deep Plate Exercise and contains pan-seared sea bass, celery root purée, thumbelina carrots, fine herbs, and lucky leaf micro beets.
