This Deep Plate exercise from May 2009 features Executive Chef Tom Jankovich of Grandfather Golf and Country Club in Linville, North Carolina.

The first dish is a tarragon pesto lamb chop with a pear croquette potato, haricots verts, and lamb jus lie'.

The second plating is maple-glazed salmon with crispy sweet potato slaw and fried leeks.
